According to a yet unconfirmed leak, the Spice and Wolf (Ookami to Koushinryou) remake is listed for 25 episodes — which means two cours. That thought excites the fans — and, assuming the leak is actually true, confirms some of the previous suspicions about how much the new anime is going to adapt.
Two cours mean a 4-5 volume adaptation, possibly
A length of 25 episodes almost certainly confirms the new anime will get to the arc that the original adaptation skipped. That arc is in Volume 4, while the two seasons of the first adaptation adapted Volumes 1-3 and 5.
However, questions still remain about the pacing of the anime. If the leak is true, the new anime will probably adapt the first 4 or 5 volumes. While some fans feel that 5 volumes — 5 episodes per arc — in two cours would be perfect, others believe that the pacing of the original, 2 volumes per cour, would be a better option.
Unknown if split or continuous
While a lot of people assume this means that the anime will run for two continuous cours, the truth is that we don’t know it yet (and neither does the leaker, apparently). As such, it is entirely possible that the new anime is planned for two split cours.
If the Spice and Wolf remake airs for two split cours, then covering 5 volumes would make little sense — there’s really no good reason for the anime to stop mid-volume.
This is actually a more likely scenario — Passione isn’t a studio that is exactly known for making two-cour series, and many fans doubt their ability to work on two continuous cours of anime.

Regardless of whether the new anime runs continuously or with split cours, fans are excited to see it is not just a one-cour project. After all, having it run for only one cour would make no sense, as it would just be a re-adaptation of the content we’ve already seen in the anime.
Many fans also feel that the remake being two cours indicates that the producers believe it will be profitable. As such, they have hopes for the anime running even past the two first cours — possibly adapting all the currently published light novel volumes.
Granted, it’s too early to speculate about that yet, but Spice and Wolf fans have hopes — after all, they waited for more anime content for over a decade.
