We saw a lot of corroboration in the course of events. Gojo was right (at least somewhere). It's not so much the dire circumstances, but the negligence of the leadership and the broken training system that cause the sorcerers to suffer.
System proves to be a failure
Perhaps the brutal training system is typical for many modern shonen. For example, Demon Slayer (Kimetsu no Yaiba). The test to join the ranks of the demon slayers can hardly be called gentle. Candidates are left among dangerous creatures for days, and only a few survive.
The same goes for Attack on Titan (Shingeki no Kyojin). Although the cadets are given the opportunity to choose where to continue their service, their encounter with the titans is almost inevitable. Though we can chalk it all up to the violent world.
The Jujutsu Kaisen world doesn't look so terrible. There are scary and incredibly powerful creatures, but they're not titans that want to eat you at every opportunity. The ordinary people in Jujutsu Kaisen suffer less than in other anime (with the exception of Shibuya).

Living (or not so living) examples
Although Gojo and Geto are considered powerful sorcerers, they are still students in the Hidden Inventory Arc. They are sent on a challenging assignment to protect the Tengen vessel. Gojo gains new abilities during the mission, not because the older sorcerers have taught him, but because he is on the brink of life and death.
Geto is one of the most glaring examples of a broken system. The sorcerer's academy doesn't have many students, but the leadership didn't notice (or care) about his depressed state after Riko Amanai's death, and it led to disaster.
It's shocking how easily the senior sorcerers sent Yuji, Nobara and Megumi on a prison mission in the first season. Sure, it was done specifically to get rid of Sukuna's vessel, but with Yuji there were two young and capable sorcerers who could have easily gotten hurt.
However, the academy leadership didn't care about the fate of the young sorcerers. After all, they wanted to kill Yuta without looking into the matter when they felt threatened. Now, according to the anime, he is on a mission against terrorists.
Most likely, things would have turned out differently in Shibuya if the top sorcerers had paid more attention to their students and given them more time to train and study.
